Roasted sweet potatoes

Sweet potatoes are delicious cooked in simple ways and roasting is one of them.

Ingredients

4 sweet potato (peeled and cut into chunks)
  seasoning (salt and pepper to taste)

Instructions

Preheat oven to 375°F (190°C).

Place the sweet potatoes in an oven proof pan. Drizzle with olive oil, season with salt and pepper, and turn to coat.

Roast for 40-45 minutes or until tender inside and golden brown outside.

Serve warm.

Notes

For roasted sweet potatoes with rosemary, sprinkle 1 Tbs chopped fresh rosemary together with the salt and pepper. Garnish with some more chopped rosemary before serving.

For roasted sweet potatoes with garlic, add 2 cloves garlic, peeled and finely chopped just before seasoning. Garnish with some more chopped rosemary before serving.

Why not roasted sweet potatoes with rosemary and garlic? Just add both 1 Tbs chopped fresh rosemary and 2 cloves garlic, peeled and finely chopped, before seasoning with salt and pepper.
