Pasta with broccoli and mushrooms

Pasta with broccoli and mushrooms is healthy comfort food. Either as an appetizer or a meat free main course, this recipe will be well received.

Ingredients

1 package pasta (angel hair type, 8 oz package)
2 tablespoons olive oil
1 onion (sliced)
2 cloves garlic (crushed)
4 mushroom (large and flat mushrooms such as Portobello, sliced)
2 tablespoons tomato paste
1⁄2 cup wine (white wine)
4 tomato (ripe, washed and chopped)
1 head broccoli (cut into florets)
2 tablespoons parsley (finely chopped)
  cheese (freshly grated Parmesan)

Instructions

  1. Cook the pasta according to the manufacturers directions. Keep warm.
  2. Heat the oil in a large heavy skillet. Add onion and garlic, cook for 3 minutes. Add in the mushrooms, tomato paste, wine and tomatoes, cooking over a medium heat for ten minutes.
  3. Add in the broccoli, cooking for an additional 5 minutes or until liquid has reduced slightly. Vegetables should be tender.
  4. Toss with the hot drained pasta, and top with parmesan cheese. Add salt and pepper to taste.
