Citrus fine green beans

Boiled or steamed green beans with a simple dressing make a wonderful warm salad.


3 c green beans (fine green beans, washed and ends trimmed)
2 T olive oil
  seasoning (salt and pepper to taste)
1 lemon (juice and finely grated zest)


Steam the beans for 15 minutes - alternatively, cook the beans in boiling water for 6-7 minutes - until tender.

Return to the pan, add olive oil, lemon juice and grated lemon zest. Cook gently for a couple of minutes.

Substitute 1 lemon with 1 orange, small, or 1 1/2 limes. The flavor changes dramatically.

Substitute olive oil with butter for a side dish French style.
