Boiled or steamed green beans with a simple dressing make a wonderful warm salad.
Steam the beans for 15 minutes - alternatively, cook the beans in boiling water for 6-7 minutes - until tender.
Return to the pan, add olive oil, lemon juice and grated lemon zest. Cook gently for a couple of minutes.
Substitute 1 lemon with 1 orange, small, or 1 1/2 limes. The flavor changes dramatically.
