Bacon and celery stuffing

This recipe is good for those birds that bring ghe giblets inside.

Ingredients

2 slices bacon (smoked streaky bacon, rind removed and chopped)
2 celery (chopped)
1 1⁄2 tablespoons butter (or cooking oil)
2 tablespoons bread crumbs (soft)
  seasoning (salt and pepper to taste)

Instructions

  1. Melt butter in a pan. Add bacon and celery. Cover and cook for 4-5 minutes.
  2. Add chopped chicken liver and bread crumbs to the pan. Season to taste.
  3. Cook 1-2 minutes more. Allow to cool before filling the neck cavity with this.

Notes

This recipe should be enough for one 4-5 lb chicken. Cooking time does not include oven time.
