Toasted pita bread with spinach and garbanzo beans

This toasted pita bread with spinach and garbanzo beans provides a healthy vegetarian option.

Ingredients

1⁄4 cup olive oil (extra virgin olive oil)
1 teaspoon salt (sea salt)
1 lemon (juice only)
1 can chickpeas (15 oz can chickpeas or garbanzo beans)
10 ounces spinach (baby spinach, rinsed)
4 pieces bread (pita bread)

Instructions

Heat the olive oil in a large frying pan. Add the garbanzo beans and cook for a few minutes. Add the baby spinach in batches and cook until just wilted.

Season with salt. Add the lemon juice and stir.

In the meantime, slightly toast the pita bread and serve immediately with the spinach and garbanzo bean mixture.

Notes

Chickpeas are also known as garbanzo beans.
