Rhubarb Ketchup

Goes well with steaks, pork or veal chops, chicken, onion rings, wild game, salmon.

Ingredients

3 onion (medium sized, chopped)
1 cup vinegar (white vinegar)
1 cup brown sugar (packed)
1 cup sugar
1 can tomato (diced tomatoes, undrained, 28 oz can)
3 teaspoons salt (or to taste)
1 teaspoon cinnamon
1 teaspoon mixed spice (pickling spices)
4 cups rhubarb (diced rhubarb, fresh or frozen)

Instructions

Combine all the ingredients together in a large heavy bottom sauce pan.

Simmer 1 hour, until desired thickness.

Allow to cool.

Preparation time 15 minutes
Yield
6 cups
