Italian style zucchini

This Italian style zucchini makes a comforting dish to bake or finish under the broiler.

Ingredients

2 c zucchini (diced)
2 T butter
1 T flour (heaped, plain flour)
1 1⁄2 c milk
1⁄2 c cheese (grated)
4 tomato (sliced or quartered)
  seasoning (salt and pepper to taste)

Instructions

Pre-cook zucchini

  1. Bring water to the boil in a pan. Add a little salt and the zucchini. Boil for 5 minutes and drain.

Prepare the sauce

  1. Melt butter in a pan and stir in flour. Cook for 2 minutes over a moderate heat.
  2. Pour in milk, gradually, stirring continuously until the sauce boils. Cook for 5 minutes and season to taste.
  3. Add half of the grated cheese and cook, stirring constantly, until the cheese blends in.

Bring all together

  1. Place the zucchini into a greased ovenproof dish and pour over the sauce.
  2. Top with the tomato slices and sprinkle the other half of the grated cheese.
  3. Place under the broiler and cook until the cheese melts and begins to brown. Alternately bake for 30 minutes in an oven heated to 400°F (200ºC).

Notes

2 cups diced zucchini is about 1 lb whole. Wash and cut zucchini into 1 1/2 inch chunks.
