Fish chowder (Bahamas)

Made with fresh fish, hearty vegetables, and simple seasoning, this chowder is both comforting and nourishing. A staple in Bahamas households, it brings together the freshness of the sea with the warmth of home-cooked flavors.

Ingredients

2 pounds fish (white fish, clean, cut into uniform pieces)
4 cups water
1 onion (peeled and chopped)
2 potato (peeled and diced)
2 tomato (rinsed and chopped)
2 celery (rinsed and chopped)
1 teaspoon salt (or to taste)
1⁄4 teaspoon pepper (or to taste)

Instructions

Heat the water in a large pan. Add fish when boiling and cook until tender, about 15 minutes.

Strain the liquid and return to the pan. Remove skin and bones from the fish and reserve.

Add the remaining ingredients, including seasoning, to the fish stock in the pan. Cook over medium heat until the vegetables are done, 10-15 minutes. 

Flake the reserved fish and add it to the pan. Heat the fish chowder to serving temperature, if needed and serve.

Notes

Use the white fish in season. The fish is boiled with bones and skin to make a better stock.

Variations

Substitute the fish, or part of the fish, for seafood to make a seafood chowder.

Substitute half the water with milk for a more substantial soup.

Add other vegetables, like corn or bell pepper, to your taste.
