Cold pasta salad

This pasta salad is prepared with mushrooms and peppers, with a poppy seed, tomato flavored dressing, and served chilled.

Ingredients

8 ounces pasta (spirals or other short pasta)
1 cup mushroom (sliced)
4 scallion (finely chopped)
2 bell pepper (one red and one green, seeds removed and cut into strips)
1⁄2 cup olive oil (extra virgin olive oil)
3 tablespoons vinegar (white wine vinegar)
1 tablespoon pureed tomato
1 teaspoon poppy seed
2 teaspoons herbs de Provence
2 teaspoons salt

Instructions

  1. Mix together the oil, vinegar, tomato puree, poppy seeds, herbes the Provence and salt to make the dressing.
  2. Cook the pasta shapes in plenty of boiling salted water for 10 minutes -or as indicated in the instructions- and drain.
  3. Pour the dressing over the pasta and stir until the shapes are well coated with dressing. Cool completely.
  4. Add the vegetables and stir to distribute evenly and to coat them in the dressing as well. Chill before serving.
