Black bean salsa

A high fiber option for a salsa or dip. This recipe yields 8 to 10 servings. A serving is 1/3 cup.

Ingredients

1 cn beans (black beans, drained and rinsed, 15 oz can)
1 onion (small, finely chopped)
1 tomato (ripe, peeled, seeds removed, finely chopped)
1 T vinegar (red wine vinegar)
1⁄2 t salt (or to taste)
1⁄2 t sugar
1 pn pepper (or to taste)

Instructions

Combine oil, vinegar, salt, sugar and ground pepper in a bowl until well blended.

Add the rest of the ingredients and stir to mix.

Chill for 15-20 minutes to allow flavor to mix.

Notes

To make an equally healthy black bean dip, omit the chopped tomato, add 1 clove garlic, finely chopped, and process the mixture in a food processor or blender until it becomes a coarse paste.
