Mughlai pulao

This meat Mughlai style is easy to prepare, although a moderate rating may be applied because of the long list of ingredients due to the variety in spices.

This is a fantastic way to know about Indian culture. Mix your own spices or, as an easier alternative to the separate spices, buy some garam masala pre-made.

Peking duck

The key to good Peking duck is the elaborate preparation that takes place before cooking. The bird should be thoroughly plucked and cleaned. Then it must be wiped, preferably with a bit of gin and hung to dry. Let the air flow through the bird for several hours. Keep the mouth open, a small cardboard tube works well.

Moussakaa

This is the Egyptian version. There are many variations in the surrounding countries. Moussakaa makes great main course, just serve with a green salad on the side.

Mexican lasagna

This is one of the recipes that came to Arizona from Mexico; probably based in the typical quesadillas - corn tortillas filled with meat, cheese, or vegetables, and baked - also very popular. Corn tortillas are used in place of the traditional lasagna sheets.

Maine lobster

Lobster has a very special, slightly sweet taste and a succulent texture, being juicy and tender, yet firm. A medium sized lobster, steamed or boiled just out of the water makes an indescribable meal.
