Sour cream and egg dressing

This sour cream and hard boiled egg dressing is especially good over spring leaf lettuce.

Ingredients

2 egg (hard boiled, separated yolk and white)
1 cup sour cream
2 scallion (chopped)
3 tablespoons vinegar
1⁄2 teaspoon mustard (powder)
1⁄2 teaspoon salt
1 teaspoon sugar
1 pinch paprika (or to taste)

Instructions

  1. Mash egg yolk, and then add salt, mustard powder, sugar and paprika.
  2. Mix in sour cream and enough vinegar to make it thick and soupy.
  3. Chop egg whites and add them to the dressing together with the chopped spring onions. Move to mix.

Notes

Reducing the liquid to give it a thicker consistency, this dressing is extremely good for a potato salad.
