Shopska salad

Shopska Salad is a vibrant and refreshing dish that hails from Bulgaria. It's made with fresh, seasonal vegetables, and it's perfect for a light meal or as a side dish.

Ingredients

4 tomato (medium sized, ripe, rinsed, chopped)
1 cucumber (peeled or not, chopped)
1 bell pepper (green or red, rinsed and chopped)
1 onion (medium sized, preferably red, peeled and chopped)
3⁄4 cup cheese (Bulgarian sirene or feta, crumbled)
3 tablespoons olive oil
1 tablespoon vinegar (white wine or apple cider vinegar)
  seasoning (salt and pepper to taste)
2 tablespoons parsley (optional, fresh parsley, chopped)

Instructions

In a large bowl, combine the chopped tomatoes, cucumbers, bell peppers, and onions. Toss gently to mix the vegetables evenly.

In a small bowl, combine the olive oil, vinegar, salt, and pepper. Whisk until well blended. Pour the dressing over the salad and toss gently to coat the vegetables.

Crumble or grate the cheese over the top of the salad. For a traditional touch, pile the cheese high in the center of the salad.

Serve the Shopska Salad chilled or at room temperature.

Notes

Accompany the salad with crusty bread for a complete meal. This salad pairs beautifully with grilled meats, seafood, or as part of a mezze platter.

It ´s best enjoyed frehs, but you can store leftover salad in an airtight container in the refrigerator. It will keep well for up to 2 days.

Variations

Add fresh herbs like oregano, dill, or mint for extra flavor.

For a Greek twist, add olives and a squeeze of lemon juice.

Include artichoke hearts and sun-dried tomatoes for a deeper flavor profile and a Mediterranean touch.
