Mixed bean salad with lemon and cilantro

This salad mixed bean salad with lemon and cilantro is a recipe very quick and easy to make, yet makes a nice lunch or light dinner. A salad that is packed with fiber to give you another healthy choice.

Ingredients

1 can beans (mixed beans, or 2 cups cooked mixed beans)
1 tablespoon coriander (finely chopped)
2 tablespoons lemon juice
1⁄2 lemon (zest only)
1 tablespoon olive oil (extra virgin olive oil)
1⁄2 onion (red, small, thinly sliced)
1 tomato (diced small)
  seasoning (salt and pepper to taste)
3⁄4 cup feta cheese (crumbled)

Instructions

Mix all ingredients in a large bowl and toss together.

Serve sprinkled with feta cheese and whole wheat nutty bread.

Notes

Cilantro is the Spanish word for coriander.

Omit the feta cheese or substitute with soy cheese to make this recipe dairy free.
