Mighty mushrooms
Healthful mushrooms make also a delicious side.
Instructions
- Soak dried mushrooms in a little hot water, just to cover, for 20 minutes
- Using a large saucepan, heat the oil, add all the mushrooms. Stir well and cover. cook gently for 5 minutes.
- Add garlic, coriander and season to taste. Cook another 5 minutes. The mushrooms should be tender and the liquid should be reduced.
- Mix in the parsley and cool slightly.
