Easy pumpkin cake

If you carve your own pumpkins, cook the pulp and keep it to make a crustless pumpkin cake.

Ingredients

4 egg
2 cups sugar
1 cup cooking oil (vegetable oil)
3 cups flour (all purpose)
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1 cup raisin (or nuts)

Instructions

  1. In the food processor, combine the eggs an sugar until smooth.
  2. Add the flour, baking powder, baking soda, salt, cinnamon and raisins or nuts. Stir in the cooked and mashed pumpkin.
  3. Turn the batter into two round cake molds, greased and lightly floured.
  4. Bake in a preheated oven at 350°F for 40 minutes.
  5. Unmold and stack the cakes, and ice with an orange, tinned, frosting.

Notes

When you don't have much time to make a pumpkin cake from scratch, the food processor and tinned frosting will do.
