Classic English potato salad

Ingredients

1 1⁄2 pounds potato (new potatoes best)
2 cups mayonnaise
3⁄4 cup cream (heavy cream, doubld cream or sour cream)
2 tablespoons chives (fresh chives, finely chopped)
2 tablespoons parsley (optional, fresh leaves, finely chopped)
1 tablespoon lemon juice (optional, freshly squeezed)
  pepper (freshly ground black pepper)
  salt (to taste)
  water (to boil potatoes)

Instructions

  1. Wash and peel potatoes. Cut into chunks and cook in a large pot of salted water until tender, not mushy, less than 15 minutes. Drain and allow to cool.
  2. Place potatoes into a bowl.
  3. Mix in the mayonnaise and sour cream. Carefully mix in all the ingredients, adding salt and pepper to taste.
  4. Serve cold.
