Broccoli and carrot rice

Instead of just cooking rice, why not try this enticing option? This is a way to add more vegetables to the diet.

Ingredients

1 1⁄2 cups broccoli (broccoli florets)
1 carrot (cut into cubes)
3 tablespoons cooking oil (vegetable oil)
1⁄2 teaspoon pepper (whole peppercorns)
1 onion (finely sliced)
1 teaspoon salt
1 teaspoon sugar
1 cup rice (basmati rice)

Instructions

Bring to boil 2 cups of water, with sugar and salt inside, before cooking the carrots and broccoli in it for 2 minutes.

After draining and setting aside, we prepare a hot pan with the oil, cumin and pepper.

When the cumin changes color we add the onion and when that goes transparent we throw in the previously cooked carrots and broccoli.

After 2 minutes we add the rice, stirring for 30 seconds before adding two cups of water.

As it begins to boil we cover it with a tight fitting lid, lower the heat and cook until the water evaporates.
