Pumpkin damper

A pumpkin version of the Australian bread.


2 lb flour (self raising flour)
1⁄2 t salt
2 1⁄5 oz butter
1⁄3 c water
3 c pumpkin (cooked and mashed pumpkin)


Stir flour into the salt then do the same with the butter.

Make a well and add the pumpkin and water and knead the mixture into a dough.

Cut into two half then place both on a greased baking tray.

Cut a cross 1/2 deep across both tops.

Bake in a hot oven fr 10 minutes then in a reduced heat for a further 20.
