Pineapple salsa

Fruit of the tropic the pineapple is. As such it makes the pork meat to take on the Caribbean flavor.

Ingredients

1 pineapple (small, peeled, cored, cut into 3/8 inch cubes, about 1 1/4 cup diced pineapple)
1 banana (small, barely ripe, peeled and cut into 3/8 cubes)
1⁄2 cup grape (seedless white grapes, halved)
1⁄2 avocado (firm avocado, peeled and cut into 3/8 inch cubes)
4 teaspoons lime juice
1 chili pepper (stemmed, seeded and minced ajalapeño chili)
1 teaspoon oregano (fresh leaves, minced)
  salt (to taste)

Instructions

  1. Combine all ingredients, salt to taste.
  2. Allow to sit at room temp for 30 minutes.
  3. Serve along side pork loin chops.

Notes

This salsa goes well also with chicken or veal, apart from pork.
