Peach salsa

Simple food becomes bright and flavorful with the addition of a simple salsa such this peach one.

Ingredients

2 peach (ripe but not mushy, pitted and chopped coarse)
1 bell pepper (red, small, cored, seeded, and diced)
1 onion (red, chopped)
1⁄4 cup parsley (fresh leaves, chopped)
1 clove garlic (medium size, minced)
1 chili pepper (stemmed, seeded and minced)
1⁄4 cup juice (pineapple juice or peach juice)
  salt (to taste)

Instructions

  1. Combine all ingredients. Add salt to taste.
  2. Cover and place in the fridge for 1 hour to 4 days. This allows everyone to mingle a bit.
