Pasta Freeport

This appetizing seafood pasta features tender linguine tossed with succulent shrimp and seared scallops, lightly coated in a garlic olive oil sauce. Toasted pine nuts add a delightful crunch, while fresh parsley brings color and freshness. 

Ingredients

2 packages pasta (linguine or fettuccine, 8oz packages)
3⁄4 pound shrimp (shrimp tails, peeled and deveined)
3⁄4 pound scallop
3 cloves garlic (peeled and minced)
3 tablespoons basil (fresh basil, finely chopped)
1⁄4 cup olive oil
2 cups liquid (well seasoned fish stock or clam juice)
  garnish (toasted pine nuts and fresh parsley)
  water (to boil the pasta)
  seasoning (salt and ground black pepper to taste)

Instructions

Boil the pasta in water with salt until it is al dente. Drain and set aside.

While the pasta is cooking, heat olive oil in a large pan and cook the garlic for 1 minute tops. Add shrimp and scallops and cook 5 minutes.

Stir in basil and liquid. Simmer 10 minutes. Check the seasoning, add salt and pepper if needed.

Distribute the pasta among the plates. Top with seafood and finish with some toasted pine nuts. Garnish with fresh parsley if you wish.

Notes

Substitute 3 tablespoons of chopped fresh basil with 3 teaspoons of dried basil.

Variations

Substitute scallops with crawfish (crayfish) tails, it can be frozen or cooked crawfish tails.

Add white fish chunks.
