Nectarine ketchup

Goes well with meat, particularly lamb and turkey.

Ingredients

1 cup onion (finely chopped)
4 cloves garlic (large, minced)
2 teaspoons ginger (peeled and grated)
1⁄2 cup water
1⁄2 cup sugar (light brown sugar)
1⁄2 cup vinegar (white wine vinegar)
1 teaspoon salt
4 nectarine (medium size, peeled, pitted and chopped)

Instructions

  1. Using a wok, mix together all the ingredients over a medium-high heat.
  2. Bring to a simmer, reduce heat and simmer gently for 30 minutes. Remove from heat, cool slightly.
  3. Place mixture into a food processor and puree for a few seconds, until smooth.
  4. Serve warm or at room temperature.
