Lamb steak with pesto

Lamb steaks grilled and served with pesto, tomato slices and grated mozzarella, a quick dish with Mediterranean flavor.

Ingredients

1 tomato (sliced)
1 tablespoon basil (red or green, your choice)
4 slices cheese (mozzarella cheese)
2 teaspoons sauce (pesto Genovese)
2 pieces lamb (lamb leg steaks)

Instructions

Grill, or pan fry, lamb steaks 4-6 minutes on one side and turn.

Cook for 2 minutes cooking on the second side and brush the top with pesto, and top with sliced tomato, mozzarella and a little basil.

Cook for 2 to 4 minutes more, until done to your taste. Just 2 minutes more for meat that is still pink inside.

Notes

Serve with salad and fries or jacket potato.

Variations

Omit the tomato, brush pesto and a top with a slice of cheese. 

Substitute mozzarella with cheddar or Monterrey Jack.
