Individual taco pizzas

Create a different kind of pizza with a flour tortilla as a base and Mexican taco filling as toppings.

Ingredients

1⁄2 lb beef (ground)
2 T water
3 T seasoning (taco seasoning)
8 tortilla (flour tortillas)
1⁄4 c scallion (chopped)
2⁄3 c sauce (enchilada sauce)
1⁄4 c tomato (already washed and diced)
1 c cheese (shredded, Cheddar and Monterrey Jack mix)

Instructions

  1. Mix beef, water, and taco seasoning together in a large skillet over medium-high heat. Cook together, stirring often, until beef is browned and cooked thoroughly; set aside.
  2. Preheat oven to 375° F.
  3. Brown tortillas simply in a skillet sprayed with cooking spray over medium heat. Put tortilla in hot skillet for about 30 seconds until brown specks appear on the bottom, flip and fry for 30 more seconds. Remove to a plate and repeat for each tortilla. If the tortillas bubble up, just poke the bubble with a knife so it lays flat again.
  4. Form each "pizza" by putting tortillas on baking sheets, then evenly distributing topping ingredients on each pizza: first refried beans, then green onions, enchilada sauce, diced tomato and shredded cheese.
  5. Place in oven just until cheese melts and lightly browns.

Notes

The original recipe makes 8 individual size pizzas to serve 4 to 8 people.
