Elderberry ketchup
This ketchup goes well with vegetables, such as roasted butternut squash, or tofu.
Ingredients
2 onion (medium size, chopped)
4 teaspoons salt
1 vinegar (spiced vinegar)
3 pounds sugar (or to taste)
4 pounds elderberry (washed, stalk removed)
Instructions
Place all ingredients into a pan, and simmer until the onions are tender.
Push through a food mill and return the pan.
Cook until sauce is thick and no excess liquid is on top.
