Denver sandwich

The Denver sandwich is a tasty and satisfying meal that combines the classic Denver omelette with the convenience of a sandwich. It's perfect for breakfast, brunch, or even a quick and easy dinner.

Ingredients

4 egg (large)
1⁄4 c onion (diced onion)
1⁄4 c bell pepper (diced green bell pepper)
1⁄4 c ham (diced cooked ham)
1⁄2 c cheese (coarsely shredded cheese, Cheddar)
  seasoning (salt and pepper to taste)
2 T butter
4 sli bread (sourdough, whole wheat, or your choice)

Instructions

In a medium bowl, whisk together the eggs until well beaten. Add the diced onion, green bell pepper, and cooked ham, stirring to combine. Season the mixture with salt and pepper to taste.

Heat 1 tablespoon of butter in a large non-stick skillet over medium heat. Pour the egg mixture into the skillet, spreading it out evenly. Cook for 3-4 minutes, or until the bottom is set and lightly browned.

Carefully flip the omelette using a large spatula, and cook for another 2-3 minutes, or until the other side is set and lightly browned.

Sprinkle the shredded cheddar cheese over half of the omelette, then fold the other half over the cheese to create a half-moon shape. Cook for another minute, or until the cheese is melted. Remove the omelette from the skillet and set aside.

Wipe the skillet clean with a paper towel, then heat the remaining 1 tablespoon of butter over medium heat. Place the bread slices in the skillet and toast until golden brown on both sides, about 2 minutes per side.

To assemble the sandwiches, place one half of the omelette on one slice of toasted bread. Add any desired toppings.Top with the other slice of toasted bread and press down gently.

Slice the Denver Sandwich in half and serve immediately. Enjoy!

Notes

Toppings could be sliced tomato, lettuce, mayonnaise, mustard or a mix of them. 

For a more substantial meal, you can also add cooked bacon or sausage to the egg mixture or serve the sandwich with a side of hash browns or fresh fruit.
