Currant ketchup

A sweet and sour ketchup sauce. Goes well with cold meats, roast pork, ham, veal.

Ingredients

5 pounds currants (picked from the stem and crushed)
3 pounds brown sugar
3⁄4 pinch vinegar
1 tablespoon cinnamon (ground)
1 teaspoon clove (ground)
1 teaspoon allspice (ground)

Instructions

  1. Mix all ingredients together in a large pot.
  2. Bring to a hard boil, and then lower heat.
  3. Simmer for 1 hour, stirring often.

1 batch
