Cranberry ketchup

Very different from cranberry sauce.

Ingredients

2 pounds cranberry
8 ounces onion (chopped)
5 fluid ounces vinegar (white wine vinegar)
10 ounces sugar
1 teaspoon salt
6 allspice (6 berries)
10 pepper (black peppercorns)
1 cinnamon (about 2 inch long piece)

Instructions

  1. In 10 oz of water, bring the cranberries and onions to a boil. Reduce heat and simmer until cranberries bursts and onions are tender.
  2. Push through a food mill.
  3. Place the puree into a saucepan with the remaining ingredients, bring to just a boil, then reduce heat and simmer 10 minutes.
  4. Remove whole spices and allow to cool.
