Crab muffins

A crab recipe that takes a little preparation but is well worth the wait for the taste.

Ingredients

1 can crab (rinsed and drained, 5 oz can)
1⁄2 cup butter (softened)
2 tablespoons mayonnaise
1⁄4 tablespoon salt
5 ounces cheese (sharp Cheddar)
6 packages bread roll (English muffins or small bread rolls, halved)

Instructions

Mix the butter, mayonnaise and salt into a sauce.

Add the crabmeat.

Spread this paste on the 12 halves of muffins.

Cut each into fourths and put in freezer for 30 minutes.

Heat oven to 350º F.

Place muffins on a baking tray and bake until bubbly, about 15 minutes.

Serve hot.

Notes

This recipe can be prepared with leftover cooked crab meat.

The muffins can be frozen and they will keep for weeks. Cook from frozen.
