Chili coriander dressing

This is one case where dried coriander does not work. Use only fresh coriander leaves to prepare the dressing.

Ingredients

1 can chili pepper (green chili, chopped, 4 oz can)
1⁄4 cup coriander (fresh leaves, coarsely chopped)
1⁄4 cup water
1⁄4 cup lime juice (freshly squeezed)
2 cloves garlic
2 teaspoons honey
  pepper (ground pepper to taste)

Instructions

  1. Place all of the ingredients in a food processor or blender.
  2. Blend until smooth.

Notes

Serve as salad dressing or dipping sauce. A hand blender works really well for this recipe.

Cilantro is the Spanish name for coriander.
