Basic chili con carne

Description

This is the most basic recipe for chili. Chili keeps well frozen, so go ahead, cook extra and freeze some portions for future meals.

Ingredients

4 lb beef (ground beef)
2 c onion (chopped)
2 clv garlic (crushed or finely chopped)
1 T salt
6 t chili powder (or to taste)
2 t paprika
2 t pepper (freshly ground black pepper)
8 c tomato (canned tomatoes with juice, equivalent to 2 quarts)

Instructions

  1. Use a 5 quart heavy saucepan to brown the beef with the onions and garlic. Drain. Add all ingredients and bring to a boil
  2. Reduce heat and simmer for about 15 minutes. Serve warm, topped with cheese, crackers and chopped green onions.
