Baked cod and bacon

Baked cod and bacon is comfort food. It will make more than one remember their childhood.

Ingredients

1 onion (medium sized, sliced)
6 tablespoons butter (divided)
1 pound potato (parboiled and sliced)
  seasoning (sea salt and pepper)
1⁄2 pound bacon (smoked bacon)
1 1⁄4 cups cream (light cream)
  parsley (fresh, finely chopped)
4 pieces cod (fillets or steaks)

Instructions

Preheat oven to 350°F

In 4 tablespoons of butter, saute the onion until a golden brown in color.

In a baking dish, place the onions in a single layer, then the potatoes, salt and pepper to taste. Place the fish over the potatoes, and top with the bacon, and any remaining onion.

Bake for 15 minutes. Pour the cream over top then dot with the remaining butter pieces. Return to the oven for 40 minutes.

Sprinkle with parsley before serving.

Notes

Baked cod and bacon is one recipe mothers have always prepared for the family from many generations back.

If you don't have it, substitute cod with any white fish such as hake, haddock or sea bream.
