Bacon ketchup

Bacon ketchup has a delicious flavor.

Ingredients

1 onion (medium, diced into small pieces)
10 cloves garlic (raw, chopped small)
2 tablespoons olive oil (or vegetable cooking oil)
1⁄2 cup brown sugar
1 can tomato (whole plum tomatoes, strained and chopped, 32 oz can)
4 bell pepper (large, red, roasted, peeled, de-stemmed and chopped)
1 teaspoon paprika (smoked paprika)
1 leaf bay leaf
4 sprigs thyme (fresh thyme)
1 tablespoon vinegar (balsamic vinegar)
5 slices bacon (nice, thick bacon)
  seasoning (salt and pepper to taste)

Instructions

  1. Sauté onion and garlic in two tablespoon oil until tender and caramelized.
  2. Add the brown sugar to caramelized onions and garlic, and cook a couple of minutes. Add tomatoes, roast bell peppers, paprika, bay leaf, and fresh thyme. Reduce heat and simmer for about one hour. Add salt and pepper to taste.
  3. Mix in balsamic vinegar at the end.
  4. Fry bacon, strain and pat off excess fat. Chop into small pieces and fold into the tomato mix.

1 batch
