Apricot ketchup

Description

Apricot ketchup goes well with: teriyaki chicken, meatballs, pork ribs.

Ingredients

1 c apricot (dried)
1 1⁄2 c water
1 1⁄2 c wine (dry white wine)
1⁄4 c vinegar (tarragon vinegar)
1 shallot (small, minced)
2 clv garlic (minced)
1⁄4 t ginger (ground)
1 pn allspice (ground)
1 pn turmeric (ground)
1 cardamom (ground)
3 T honey
  seasoning (salt, ground black pepper, and lemon juice to taste)

Instructions

Simmer all ingredients minus the honey salt, pepper and lemon juice, in a saucepan for about 15 minutes. Allow to cool.

Puree mix in a blender until smooth.

Add the excluded ingredients.
