Potage Crécy
Potage Crécy is the French kitchen's love letter to the carrot: a smooth, velvety soup that takes one humble root vegetable and coaxes every bit of sweetness out of it. Carrots are gently softened in butter with a little onion, simmered in stock until tender, then blended silky and enriched with a swirl of cream. A small handful of rice cooked in the pot thickens the soup naturally and gives it body without flour. Vermouth
