Strawberry coulis

This strawberry coulis is a versatile sauce that adds a touch of elegance and a burst of fresh, fruity flavor to any dish. Its simplicity and the rich, concentrated strawberry taste make it a favorite for enhancing a wide variety of desserts and drinks.

Ingredients

2 c strawberries (fresh strawberries, hulled and roughly chopped)
1⁄4 c sugar (fine sugar, adjust based on the sweetness of the strawberries)
1 t lemon juice (to balance flavors)

Instructions

Blend strawberries, sugar and lemon juice until the mixture is completely smooth. 

Pour the strawberry mixture into a small saucepan. Bring it to a simmer over medium heat, stirring occasionally. Reduce the heat to low and continue to simmer for about 10-15 minutes, or until the coulis has thickened slightly. Remember, it will thicken more as it cools.

Remove the coulis from the heat and let it cool to room temperature. Once cooled, transfer it to an airtight container and refrigerate. The coulis will thicken further and develop its flavors as it chills.

Notes

For a smoother coulis, strain the blended mixture through a fine-mesh sieve into a bowl to remove the seeds. Use a spoon to press the mixture through the sieve and scrape the bottom for all the liquid.
