Thyme flavored braised veal
Veal is a very lean meat and it can be very bland. Thyme adds depth of flavor to many Mediterranean dishes, such as this veal hotpot.
Instructions
- Sprinkle the veal piece with salt and pepper.
- Heat the butter in a large pan. Dip the meat in the flour then brown in the hot butter.
- Add the wine, boiling water and lemon juice, and sprinkle with the lemon rind. Cover and simmer on low heat until the meat is tender, about 30-40 minutes.
- Serve with its own gravy on the side.

Notes
Fluffy mashed potatoes with butter make an ideal side dish.
Add a little water if the meat gets dry when simmering.
