Thyme flavored braised veal

Veal is a very lean meat and it can be very bland. Thyme adds depth of flavor to many Mediterranean dishes, such as this veal hotpot.

Ingredients

2 pounds veal
1 tablespoon flour
1 tablespoon butter
1⁄2 cup wine
2 cups water
1⁄2 lemon
1 sprig thyme
  salt
  pepper

Instructions

  1. Sprinkle the veal piece with salt and pepper.
  2. Heat the butter in a large pan. Dip the meat in the flour then brown in the hot butter.
  3. Add the wine, boiling water and lemon juice, and sprinkle with the lemon rind. Cover and simmer on low heat until the meat is tender, about 30-40 minutes.
  4. Serve with its own gravy on the side.

Notes

Fluffy mashed potatoes with butter make an ideal side dish.

Add a little water if the meat gets dry when simmering.
