Tabbouleh parsley salad

Description

Another more traditional form of tabbouleh which tastes spectacularly.

Ingredients

2 c parsley (washed, drained and chopped)
6 tomato (washed and diced)
1⁄2 c mint (optional, washed, drained and chopped)
1⁄4 c onion (peeled and diced)
1⁄2 c lemon juice
1 t salt
1⁄2 c olive oil (extra virgin olive oil)
1 pn allspice (ground allspice)
1⁄2 c bulgur (fine cracked wheat, prepared)

Instructions

Mix in the tomatoes with the cooked bulgur. Rub the onion into the salt.

Mix both mixtures together then add in the rest of the ingredients and mix again.

Notes

To prepare bulgur wheat, place it in a bowl, cover with cold water and stand 15-30 minutes. Drain before adding it to the tabbouleh.

Variations

For a more citrusy tabbouleh, add finely grated lemon rind.

Add other ingredients to taste, such as chopped cucumber or bell peppers, green, red and yellow.
