Swiss fried apples and bread

Another Swiss breakfast option and surely a favorite with children. The flavors of apples and cinnamon blend beautifully.

Ingredients

4 tablespoons butter (unsalted butter)
2 apple (peeled, cored, quartered and sliced thin)
1 pinch cinnamon
2 tablespoons brown sugar
4 slices bread (toasted and diced)

Instructions

Heat 2 Tbs butter in a large skillet over medium-high heat.

When the butter is bubbling, add apple slices and sprinkle cinnamon and sugar over. Cook for 5-6 minutes, turning frequently with a spatula.

Add diced, toasted bread and turn heat to medium low. Continue to cook for another 5-6 minutes, stirring frequently.

Place cooked apple and bread slices on a serving platter and top with remaining butter.

Serve immediately.

Notes

Cut the toasted bread slices into 3/4 inch (190 mm) cubes.

For strict vegetarians, substitute butter with vegetable margarine or vegetable oil. Nut oil adds a nice touch, try it.

Sweet fried apples with bread is another Swiss option for breakfast. Also serve this one as a dessert - with vanilla ice cream or crumbled cookies on top - or as a side dish with ham or roasted pork -adding a pinch of nutmeg.
