Sweet potato casserole (Bahamas)

A delightful blend of creamy mashed sweet potatoes, butter, sugar, cream, eggs, and warm spices like cinnamon and allspice. Baked until set and optionally topped with toasted mini marshmallows, this dish offers a harmonious balance of sweetness and spice.

Ingredients

2 pounds sweet potato (rinsed, whole)
1⁄2 cup butter (and a little bit more for greasing the baking dish)
4 tablespoons sugar (or to taste)
1⁄2 cup cream (light cream or sour cream)
2 egg (beaten)
2 pinches seasoning (cinnamon, allspice or both)
  marshmallow (optional, mini marshmallows to cover)
  water (to boil the sweet potatoes)

Instructions

Place whole sweet potatoes in a pan, cover with water. Boil the sweet potatoes until tender, 30-40 minutes depending on size.

Heat oven to 350ºF. Grease a baking dish.

Drain, peel and place into a bowl. Mash well. Stir in butter, sugar, cream, beaten egg and spices. Mix well.

Spread the mash into the prepared baking dish and bake until set, 30-40 minutes. 

If using marshmallows, remove from the oven and sprinkle the marshmallows over the top. Return to the oven until the marshmallows are lightly browned, 5-10 minutes more.

Remove from the oven and serve warm.
