Orange glazed pork tenderloin

This orange flavored pork recipe will add variety to your low fat diet. Lean pork is as low fat as beef.

Ingredients

1⁄4 teaspoon pepper (coarsely ground black pepper)
2 tablespoons mint (choped fresh mint + 2 sprigs for decoration)
2 tablespoons soy sauce (low sodium)
2 cloves garlic (finely chopped)
1 piece pork (pork tenderloin. about 8 oz)
2 tablespoons marmalade (orange marmalade)
  cooking oil (cooking spray, your favorite)

Instructions

  1. Trim any fat from tenderloin. Cut into two pieces.
  2. Cut a lengthwise slit down each piece, about 2/3 of the way through and then flatten.
  3. Spray tenderloin with cooking spray and then sprinkle tenderloin with ground pepper to your liking.
  4. Combine marmalade, fresh mint, soy sauce, and garlic.
  5. Place tenderloins in roasting pan and pour marmalade mixture over top and spread out evenly.
  6. Bake at 350° F for 35 minutes or until juices run clear.
  7. Garnish with mint springs at serving time.
