Grilled poussins

Tender young chickens marinated in lemon juice and olive oil flavored with garlic and parsley and then grilled or broiled.

Ingredients

1⁄3 cup lemon juice
1⁄4 cup olive oil
1 teaspoon garlic (finely chopped)
1 tablespoon parsley (finely chopped)
  seasoning (salt and freshly ground pepper to taste)
4 poussin (split and flattened)

Instructions

Place skewers through wings and legs to keep the poussins flat while grilling. Place in a glass container.

Make the marinade by mixing lemon juice, olive oil, garlic, parsley, salt and freshly ground black pepper together. Pour over the chicken and brush well.

Marinate in the refrigerator for 3-4 hours, turning occasionally.

Broil, grill or barbecue for 25-30 minutes, turning occasionally. Baste frequently with the marinade.

Notes

For a more succulent flavor, brush the poussins once or twice with melted butter when they are almost cooked.

This basic recipe can have many variations. You could, for instance, prepare chicken or turkey kebabs in the same fashion, or boneless chicken breasts, turkey cutlets, chicken or turkey thighs - boneless and pounded - and flattened turkey breast slices.
