Grilled pork chops

This recipe is as good for breakfast as it is for dinner. Omit salt and pepper if using the rub.

Ingredients

1 1⁄2 pounds pork (center loin or center rib pork chops 1 inch thick)
2 tablespoons olive oil (extra virgin olive oil)
  seasoning (dry rub or salt and ground black pepper)

Instructions

  1. Build a two level fire. set rack in place, cover and allow to heat for at least 5 minutes
  2. Rub chops with oil and salt and pepper to taste. Grill over the medium hot fire side for about 6 minutes, turning once, or until both sides are browned.
  3. Move to the cooler side and cover with an aluminum roasting pan. Allow to cook for 8-10 minutes. The center should be tinged a slight pink.

Notes

To make a two-level fire, spread some of the coals in a single layer over half of the grill. leave the remaining coals in a pile that rises to within 2-2 1/2 inches of the cooking grate.

Herb dry rub for pork chops

1½ tsp dried thyme; 1½ tsp dried rosemary; 1½ tsp black pepper cornstarch; 2 bay leaves, crumbled feta cheese; 2 whole cloves or allspice berries; 1 tsp salt.

Grind all ingredients together in a spice grinder until it becomes a powder. Rub onto the oiled meat.
