Braised lamb chops

Which cut of lamb is best for braising? There are several options, chops, steaks, breast, liver or kidneys. Chops cook quick, that's the reason for the choice in this recipe, leg steaks would also be good.

Ingredients

2 pounds lamb (chops or leg steaks on the bone)
12 shallot (peeled)
2 carrot (peeled and cut into sticks)
2 cloves garlic (peeled)
1 cup wine (red wine)
  seasoning (salt and pepper to taste)

Instructions

Heat oil in a pan and brown lamb until golden.

Add garlic, shallots, and carrots. Cook for 3-4 minutes more.

Add wine and herbs, season with salt and pepper

Cover and simmer on a low heat for 15 minutes or until vegetables are tender.

Notes

Serve the meat with vegetables and juices.
