Banana fritters
Mashed bananas mixed with a light batter, fried to golden perfection, and topped with powdered sugar. Serve with honey or ice cream for extra indulgence.

Instructions
Stir mashed banana and vanilla extract into the sweet fritter batter.
Heat 2 inches of cooking oil to 375ºF in a deep skillet or a saucepan.
Drop rounded spoonfuls of the banana batter into the hot oil. Fry until golden brown in all sides. turning once.
Remove the banana fritters from the oil and drain on absorbent paper.
Sprinkle with confectioner´s sugar, if using, and serve straight away.
