It's leek cuisine

What can you do with leeks other than leek and potato soup? I have not found many recipes with leeks.

You have been unlucky not to find other recipes with leeks in their list of ingredients. There is the traditional leek and potato warm soup and there is vichyssoise. Try pumpkin and leek soup for something a little different from potatoes. There are many dishes with leeks, however, I must confess that leeks have been always a cheesy affair at home. If not, check the recipes with leeks my family enjoys. Not a single one is free from cheese in some form.
