Mango lassi

A yogurt based drink from the Punjab region in India that has become very popular. A lassi is refreshing and compliments spicy food.

Ingredients

1⁄2 cup milk (or water)
2⁄3 cup yogurt (plain yogurt)
2 teaspoons sugar
1 mango (maduro, pelado, sin hueso, cortado en trozos)

Instructions

Mix all ingredients in the blender until all fruit bits have been pureed and the drink is frothy.

Serve in tall glasses with a few ice cubes or crushed ice.

Notes

Chill all ingredients before preparing the drink.

For a savory lassi, mix 2/3 cup of plain yogurt with 1/3 cup water and a pinch of salt. Serve in a tall glass with ice cubes or crushed ice. Garnish with toasted cumin seeds and finely chopped fresh coriander.

There are sweet lassis, flavored with sugar and rose water, and savory lassis, flavored with salt, pepper, cumin and coriander. Cardamom can be used with both versions.
