Bread pudding

This is a recipe that came to Indiana with English settlers, similar to their bread and butter pudding.

Ingredients

3 c bread (day old bread, cubed)
1⁄2 c raisin
4 egg (beaten)
2 c milk
1⁄3 c sugar
1 t vanilla extract (optional)

Instructions

  1. Heat the oven to 350º F and grease a baking dish with the shortening.
  2. Put the bread and raisins into the dish and mix.
  3. Beat together the eggs, milk, sugar and vanilla extract, if using.
  4. Pour the milk and egg mixture over the bread and raisins.
  5. Bake in the middle of the oven until set, about 35-45 minutes.
  6. Serve warm.

Notes

If you don't have it, substitute 1 teaspoon vanilla extract with 1 tablespoon vanilla ice cream.
