Chile

Food and wine from Chile, South America.

Caldo de marisco is a quick, brothy seafood soup. Onion, garlic and parsley are simmered briefly in water, then shrimp, clams, white fish and scallops are poached in it with a splash of white wine. The broth stays light and clean, so the flavor of the shellfish comes through.

A simple, comforting fish soup from the coast of Chile, made by simmering fish bones with onion and tomato to make a flavorful broth and then cooking rice and chunks of firm white fish in it with white wine. Chile's national fish soup is traditionally made with congrio, a local cusk-eel, and served very hot.

Sopapillas enchant with their light, puffy texture and sweet, honeyed flavor, making them a beloved treat in Mexican cuisine and beyond. They are popular in Latin America, particularly Chile and Argentina.

Blessed with a Mediterranean climate similar to France or California, Chile has the added advantage of being south of the equator. That puts their summers from November to March, allowing them to harvest wine during the off-season of many other countries. Time shifting allows them to satisfy the market when others can't.
